Freezer Cooking


For a while now, my sister has used this website, www.onceamonthmom.com, for meals that she can cook ahead of time and freeze. They have menus for every lifestyle, including whole foods and vegetarian. Most of the menus are for a full month of meals, but they also have "mini" menus that have 5 or 10 recipes. They give you a printable shopping list with everything you'll need to make all the recipes and instructions on the order in which to prepare the meals. It's really pretty awesome.

Anyway, this weekend was my first foray into using this website (I've done plenty of cook-ahead meals in the past, just using my own recipes). In about three hours (not including the hour I spent yesterday browning meat and chopping vegetables), I made five dinners to stick in the freezer for use later on: Sausage Stuffed Loaf, Southwestern Stuffed Peppers, Pecan Crusted Chicken, Crock Pot Chicken Enchilada Soup and Cheddar Ranch Burgers. Will let you know how they taste (and go over with the girls) ...
